Chef Jono’s childhood years were spent in Dominica, the Nature Isle of the Caribbean, where he developed an early appreciation for his environment and family traditions. When his family relocated to Antigua during his teenage years, Jono expanded his horizons while keeping his Dominican roots alive through frequent visits.
“The Caribbean is more than just where I’m from; it’s who I am,” Jono shared during the interview. “Both islands have shaped the way I see the world.”
Jono’s first passion was architecture—a dream he pursued with fervor. He earned his undergraduate degree at the renowned IIT College of Architecture in Chicago, Illinois, and later completed a Masters in Architecture + Urbanism at the prestigious Architectural Association School Design Research Lab in London, UK.
“Architecture was my way of creating something lasting, something meaningful,” Jono reflected. “I never imagined it would lead me to food, but both disciplines are about crafting experiences.”
Despite launching an architectural practice in Antigua, unforeseen challenges led him to reassess his career path. This pivotal moment became the foundation for his next chapter.
Jono’s family, steeped in culinary traditions, had instilled in him a love for food from an early age. As fate would have it, a friend in the yachting industry introduced Jono to a temporary role as a chef on a mega-yacht. What began as a short-term gig quickly turned into a thriving career. His upbringing in a family of chefs, combined with his architectural attention to detail, enabled him to shine in high-pressure culinary environments.
As a yacht chef, Jono’s ability to craft exquisite meals under pressure and his attention to detail set him apart. His dishes, inspired by his Caribbean roots, were an instant hit with clients.
“No matter where I am in the world, there’s a bit of Dominica and Antigua in everything I make,” he said. “It’s in the spices, the techniques, and the joy I put into my cooking.”
Chef Jono’s culinary prowess earned him a spot on Bravo TV’s Below Deck Mediterranean, where he served as the head chef aboard the luxury yacht Mustique. His tenure on the show introduced him to a global audience, showcasing his exceptional cooking skills, calm demeanor, and infectious energy.
“Being on the show was a whirlwind,” Jono admitted. “It’s one thing to cook under pressure, but add cameras and drama—it’s an entirely different game!”
Through it all, Jono maintained his professionalism, quickly becoming a fan favorite for his adaptability and leadership.
